If you’re looking for an easy meal that is full of flavor and protein without packing on the carbohydrates, by eliminating a grain for lettuce. Plus saving you calories while getting in extra vegetables.
Prepping your meals ahead of time, not only saves time but it can help save you from bad eating choices. You may not have time to prep out the entire week in advance, but one step to save time is to do tomorrows meal the night before after dinner.
In this recipe baking the boneless chicken breast and shredding can be done ahead of time, or just bake then heat and shred the day of. Also chopping the onion and mushrooms then placing them in a small bowl or bag will allow you to just toss them in and begin browning. Separating the lettuce leafs, rinsing and patting dry is another time saver.
Flavorful Chicken Lettuce Wraps what you need:
- 3 Boneless chicken breast cooked and shredded (you can exchange this for a tofu or other protein source such as lean beef)
- 1/2 Package rainbow slaw (found in the lettuce section)
- 3 to 4 Slices of red onion to taste
- 6 to 8 sliced mushrooms
- 3 tbs Sesame oil
- 2 tbs Low sodium soy sauce
- 8-10 Large Lettuce leafs
Directions:
- Take 2 tablespoon of sesame oil and heat in large non stick skillet. Place onion and mushrooms in and brown.
- Add shredded chicken and rainbow slaw sprinkle with 2 tablespoons of soy sauce for about 5-7 minutes until hot
- Sprinkle 1 tablespoon of sesame oil on top, toss and serve on lettuce leaf
- Roll up leaf like a burrito and enjoy!
