Five reasons why you should eat more cabbage after St. Patrick's Day

For those that celebrate St Patrick's Day authentic style, of course cabbage is on the menu. But for some, St. Patrick's Day is the only day you eat cabbage. Here are five reasons why you should eat more cabbage after March 17th.

According to Nutrition Facts and Data , we find cabbage to be:

  • Low Calorie - Like most other green leafy vegetables, cabbage is very low in calories. Cabbage can be used to bulk up any salad or steamed and added with other vegetables as a side dish.
  • Super low in carbs - All vegetables have carbs. Some more than others. Cabbage is definitely a low carb friend. Which means it is also very low on the Glycemic Index, which makes it great for diabetics. Each one cup serving has only 4 grams of carbs.
  • Nutrient dense - One cup of shredded cabbage is high in Vitamin C, Vitamin K and Folate. Not to mention it is has fiber and protein.
  • Disease fighter - The nutrients in cabbage have all been show to have a positive effect on cancer, heart disease, diabetes and osteoporosis.
  • Very low cost - Cabbage can be found year around and lasts for weeks, even without refrigeration.

It's usually best to eat cabbage raw in order to gain the most health benefit. However, lightly steaming cabbage may not be a bad idea if you allow the cut pieces to sit a few minutes before cooking. This allows the enzymes to start the process of converting glucosinolates to their active form, before they're deactivated by the heat.

Even though cabbage gets over shadowed by other super foods such as kale or collard greens, cabbage is definitely worth adding into your regular routine on St Patrick's day and beyond.
