There were more than 60 people crowded into the cozy b.side Lounge in Boulder on Saturday night, and most of them were vegan. Those kind of proportions could have only meant one thing... Vegan Drinks!
Boulder's first ever Vegan Drinks was a gathering of new and old members of the Boulder (and Beyond) Vegan Meetup group as well as friends and family. Conversations included veganism (what else), animals rights (of course), people's love lives (a must), food, hobbies, travel, alcohol, bad jokes, careers, etc. Try it out next time! Don't worry, you'll find out about it here. Vegans, vegetarians and their friends from Denver and all of Colorado are welcome!
Food included homemade:
Spring Rolls- Crisp spring roll wrappers stuffed with seasoned tempeh and Thai curried veggies, served with a spicy peanut sauce
Falafel Balls, served with hummus and pita
Pomme Frites - Sweet potatoes, russet potatoes, and zucchini served with : spicy ketchup, vegan1000 Island, vegan garlic aioli
Sesame Tofu Skewers - Served with a sweet chili dipping sauce and cucumber sesame salad
Pesto Pizza - Oven roasted tomatoes, mushrooms, walnuts, and vegan ricotta, with balsamic
Roasted Veggie Pizza - An assortment of roasted vegetables on our house made marinara with vegan ricotta
Not one of these dishes disappointed, and the sauces were worthy of many "I can't believe its vegan"s.
Vegan Drinks was a smashing success, and hopefully with more advertisement and enthusiasm the next Vegan Drinks will be a whole town engagement. Meetup members were happy to support The b.side Lounge because of their wide variety of vegan food and drink options and comfortable atmosphere. The owner of the b.side is Betsy, a vegan herself and a smiling and friendly personality. Many thanks to her and her staff for hosting Vegan Drinks!
