If there’s anybody left out there who thinks sustainable food doesn’t have great flavor, the first place I would send them is to Fireside Pizza.
Delicious, fresh, and locally sourced when possible, Fireside Pizza’s unique, mobile brick oven has taken up residence for the winter at the Bluebird Bakery and Café, 29 Village Square in Glendale, where carryout pizza, along with the goodies the Bluebird offers for breakfast and lunch, are available from 5 – 10 PM Fridays and Saturdays through April 13. Since they are also available for private parties, check their calendar before you go.
Fireside’s oven is unique in a few ways. Most brick ovens are too rigid to be mobile, so the Italian company Forno Bravo cast this one in four pieces. Then it went to Colorado to be custom-mounted on a trailer. I asked owner Mike Marschman why the oven produces such great food, and he explained that there are two types of heat at work.
“A masculine heat on top from the flame is what crisps the pizza, but built-up, feminine heat cooks it through,” he said.
While I can personally recommend their pizza, I was surprised at the variety of choices on their catering menu. The wood-fired oven will accommodate almost any type of roast meat, and the appetizers and salads sound as inviting as the pie. How about a Super Bowl party? They’re available, and the oven comes along.
