The current trend in food and nutrition is to eat more foods grown and harvested locally. In the past people depended on word of mouth to find where the best roadside stands and farmers markets were. Now, the North Dakota Department of Agriculture has produced a free guide to local food.
The directory lists more than 150 local food sources, including you pick gardens, road side stands and produce delivery.
Free copies of the 2010 Local Food Directory are available by contacting the North Dakota Department of Agriculture, 200 E. Boulevard Ave., Dept. 602, Bismarck, ND, 58505-0020, calling (800) 242-7535, or e-mailing firstname.lastname@example.org.
The directory also lists a growing calendar which outlines the best times to purchase locally grown food and plants.
Here is a favorite refreshing summer salad in our home, which I made for the first time this season last night. I look forward to later in the summer when I can make it with locally grown produce!
Refreshing Cucumber Salad
- 3 medium cucumbers peeled and sliced thin
- 3 medium tomatoes, coarsely chopped
- 1 bunch green onions, thinly sliced
- 1/4 cup olive oil
- 1/2 cup cider vinegar
- salt and pepper to taste.
Toss all ingredients together in a bowl and refrigerate at least a half hour before serving.
