Filet mignon with chocolate coffee rub

This recipe brings out the earthy and sweet flavors of our homemade rub with chocolate and coffee and compliments the filet mignon perfectly. We added a teaspoon of cayenne which accentuates the chocolate flavor of the dry rub and makes this a perfect and easy to make dinner.

Ingredients
• 2 filet mignon (9 ounces each)
• 4 tbsp unsalted butter
• Fresh pepper
• Sea salt

Ingredients for chocolate coffee rub
• 1/2 tbsp dark roasted coffee (grinded)
• 1 tbsp dark chocolate (grinded)
• 1 tsp cayenne pepper
• Fresh pepper
• Sea salt

Preparation
• Grind all ingredients for the rub together in a spice grinder and mix well with the cayenne, fresh pepper and sea salt. This can be done 1 day in advance.
• Season the filet mignon with pepper and sea salt to taste.
• Rub all sides of the filet mignon with the chocolate coffee rub. Use a little olive oil or butter to make the rub stick better if needed.
• Heat a pan until hot and melt 2 tbsp of butter.
• Sear the filet mignon on all sides (about 5 minutes each depending on desired doneness) and finish in the oven if needed for medium or well done.
• Remove the filet mignon and let rest for 2 minutes.
• In the meantime add 2 tbsp of butter to the hot pan and mix well.

Plate the filet mignon and drizzle with the melted butter which will have a slight taste of the dry rub.
Serve with any kind of steamed vegetables. Rice, couscous or puree are excellent side dishes.
