Ingredients
- 2 filet mignon
- ¼ cup sundried tomato dressing
- ¼ cup cranberry-walnut dressing
- 1 large onion
- 2 large potatoes
- Cornstarch
- Fresh pepper
Preparation
- Marinate the steak in the two dressings for at least one hour.
- Slice the onion and fry until translucent.
- Mix the marinade together, warm over low heat and add the onions.
- Thicken the marinade with cornstarch.
- Boil the potatoes and make a country puree (not entirely smooth and some small chunks left). Season with pepper and nutmeg.
- Fry the filets in a hot skillet with olive oil until brown on both sides to medium rare.
- Let cool and slice thick.
Plate the sliced filets with the thick onion marinade and serve with the country mashed potatoes on the side. We served it with crusty country bread as an extra condiment.
