February is fairly limited on seasonal fruits and vegetables; and in states like Colorado, we are left to rely on our southern neighbors for the freshest, most nutritional produce. The further out of season a fruit or vegetable may be: the further it has to travel to get to your plate. So to ensure the tastiest, most nutrient packed meals try including vegetables that are in season for the current month. Looking up recipes can be fun and challenging, and also helps introduce more meals to your menu.
