
Honor Dad on Father's Day

Let’s indulge Dad and step it up this Father’s Day. This menu does just that and when you take it outdoors, everyone is happy.
Entertaining outdoors is usually casual and appetizers that allow guests to serve themselves are best, as well as easier on the chef. Blue cheese dip with Lavosh (cracker bread), marinated shrimp and a vegetable crudités make great appetizers.
Serve strawberry daiquiris, while the family socializes. Strawberries are gorgeous and reasonable this summer . In a blender add strawberries, ice and powered sugar. Add the desired amount of Rum and blend. Easy as pie! Of course have beer and wine on hand and soda for the kids.
Steak is the star today. Choose his favorite cut of meat whether it be strip, rib-eye or filet. Costco is a perfect place to buy any of these cuts. The prices are competitive and the quality is first rate.
Bring the meat to room temperature and season it on both sides Use granulated garlic, seasoned salt and fresh ground pepper. After grilling to desired doneness, take it off the grill and add a pat of butter. The restaurants do it all the time: it enhances the flavor of the meat. It is something you don’t normally do, but remember, today you are indulging.
For sides, serve a baked potato with all the trimmings or if you want to be a wee bit fancier, make it a potato gratin. A string bean and artichoke casserole is a great chose for the vegetable. Caesar salad is a staple with steak and this recipe for the dressing is made in a food processor… so easy!
Dessert is a must so choose a Mocha Almond Icebox Cake or Chocolate Mousse.
Dad will surely say the meal was one of the best he has ever had and one of the best Father’s Day he can remember.
Recipes
Marinated Shrimp
Boil 2 lbs. shrimp in crab boil. (Liquid or powder) As shrimp turn pink, continually taste for doneness. Shrimp should boil for two to five minutes. Peel and marinate for 24 hours.
Marinade
• 1½ cups vegetable salad oil
• ¾ cup white vinegar
• 1½ tablespoons salt
• 2 ½ tablespoons celery seed
• 3 tablespoons capers
• 1/8 teaspoon Tabasco
• 2 cups sliced red or white onion (in rings)
Green Bean and Artichoke Casserole
• 3 cans artichoke hearts in water
• 3 cans French style string beans
• garlic powder to taste
• 1 cup Italian seasoned bread crumbs
• 2 t fresh lemon juice
• ¾ C Parmesan cheese
• ½ C Olive Oil
• Mix all ingredients together.Spray casserole dish with vegetable spray and pour in mixture and sprinkle a thin layer of seasoned breadcrumbs over the top. Bake at 350 degrees till hot.
Caesar Salad
• 1 garlic clove
• 1 can flat anchovies (drain oil)
• 2 dashes salt and pepper
• 2 t fresh lemon juice
• ½ t ground mustard
• 1 teaspoon Worcestershire
• 2 egg yolks only, coddled
• ½ to ¾ C extra virgin olive oil
• In a food processor pulse garlic, anchovies’ and salt and pepper. Add lemon juice, mustard and Worcestershire and pulse again. Put in egg yolks and pulse. With motor running slowly add EV olive oil in a slow steam. Mixture will be creamy. Correct seasonings usually adding in additional lemon juice. Toss with crisp romaine. Sprinkle shaved parmesan cheese over lettuce before serving. Add croutons if you like.
Mocha Almond Icebox Cake
(Make a day ahead)
1 stick butter softened
• 11/2 C powdered sugar
• 4 egg yolks
• 1 oz. rum
• 1 oz. strong black coffee
• 1 t. vanilla
• 1/3 C. sliced almonds
• 2 c. whipped cream
• 2 1/2pkgs. lady fingers
• In a large bowl cream together the butter and the sugar. Beat in egg yolks, rum, coffee vanilla and almonds. Fold in one 1 (one) Cup of the whipped cream.
Line an 8” spring-form pan with parchment paper and next line the sides of the pan with lady fingers (important) and then, line the bottom with those that remain. Pour batter into pan,and cover with another layer of lady fingers. Cover with plastic wrap and refrigerate for 24 hours. Before serving, pour the remaining cup of whipped cream over the cake Sprinkle with additional almonds and serve. Beautiful as well as delicious!
