If you are like this Working Mom, life is hectic all year long, but often during the holiday season it gets even busier and you find yourself looking for ways to keep up or catch up. For the rest of this holiday season, Working Mom will feature some tips to help you get through the season looking like and feeling like a champ!
One of the problems, Working Mom often runs into is the time to make a special dish for a get together of family or friends. This past weekend, she came up with one that will definitely become part of her repertoire!
This creamy and light pie tasted delicious and was a snap to make! Strolling through the Super Wal-mart in Monona after a busy Sunday at job number one, Working Mom picked up a couple of ready to use graham cracker pie crusts, a large box of raspberry jello, a bag of frozen unsweetened raspberries, and a large container of low fat frozen "whipped cream". Purists beware, you could use real whipping cream, but it would add onto your time and sometimes, something has to give!
Raspberry Dream Pie
- Large box raspberry jello
2 c. boiling water
16 oz container light frozen whipped cream
12 oz. bag frozen, unsweetened whole raspberries
Sugar or sweetener (to taste)
2 ready made graham cracker pie crusts
In large bowl, whisk boiling water into jello until well dissolved. Let cool for a couple of minutes and whisk in entire container of whipped cream a small amount at a time until all creamy and smooth.
Pour half of above mixture into each of the pie crusts. Refrigerate at least 6 hours. If you are really crushed for time, put in freezer for an hour and then in refrigerator for an hour.
Sweeten berries to your taste preference.
When serving spoon berries with juice over top of pie. Makes two pies.
This recipe could be changed to use other jello or fruits, but the raspberry makes a very festive looking creation! Sit back, smile, enjoy the compliments and do not tell anyone how easy it was!
