Chef Aaron Vandemark, founder of Panciuto, an intimate restaurant dedicated to local and sustainable cuisine in Historic Downtown Hillsborough, will host a community dinner on Wednesday, March 24th.
Guests will include the folks behind Fullsteam Brewery, Sean Lilly Wilson, Chris Davis, and Brooks Hamaker, who will discuss their quest to create a distinctly Southern style beer using local farmed goods, heirloom grains, and Southern botanicals. Fullsteam is scheduled to open soon in Durham and will be selling its artisinal beers at the Durham Farmers Market this spring. Brews so far include scuppernong grapes, sweet potatoes, hickory-smoked malt, kudzu, and rhubarb among their ingredients.
Several Fullsteam beers will accompany the dinner, created by Vandemark using local meats and produce. Dishes, subject to availability, may include:
- Lettuce greens with maple bacon, boiled eggs, and white beans in parmesan dressing
- “Tofeja” (stew of braised, pulled pork with spareribs, sausage and field peas)
- Stone milled, buttered polenta
- Cardamom-sweet potato ravioli with pea shoots, brown butter and parmesan
- Garlic wilted greens
- Strawberry-cream cheese ice cream “panini” with whipped cream
Dinner will be served at a long community table and food is passed, making for a good conversation and opportunities to meet like minded folks.
The restaurant doors open at 7pm, dinner begins around 7:30, with the Fullsteam folks speaking some time in between.
