Family favorite BLT Roll-ups recipe

BLT Roll-ups are a family favorite. They can be made for a light dinner with soup or a salad, or as an appetizer. They are easily put together and delicious. Try them out with your family or at the next football party or gathering, they are sure to go quickly.

BLT Roll-ups

  • 1 pound bacon, cooked and crumbled
  • 2- 8 oz containers of chive cream cheese, softened
  • 1/2 cup chopped sun-dried tomatoes
  • 1 package frozen puff pastry, thawed

In a medium bowl mix together cooked bacon, cream cheese, and tomatoes. On a floured surface, roll out the pastry into a 17x12 inch rectangle. Spread half of bacon mixture over pastry leaving a 1/2 inch border along one long side. Start rolling pastry up from opposite long side, making a log. Wrap in plastic wrap and refrigerate for 30 minutes, or for up to 3 days. Repeat with remaining pastry and bacon mixture. Preheat oven to 400 degrees, place parchment paper in baking pans. Unwrap logs, slice into 1/2 inch thick pieces and place on parchment paper. Bake for about 10 minutes. Serve hot.
