Some recipes call for red apples and others advocate the green. But whichever you choose make sure you are purchasing this year’s crop of apples. Check to see if the stems on the apples are still firm – if the skin on the apple is nice and tight – and smell the apple as many older apples will have a mold or mildew smell.
