For the foodies and sweet-tooths out there, warm out-of-the-oven breads, creamy pastas, and rich chocolate desserts are the essence of life. So when news is received of a diagnosis for celiac disease, that savory essence seems void and hollow as the realization that a gluten-free diet is ahead. Disappointment, frustration, and maybe even a little fear are expected as a result of learning that your lifestyle is due for a change and the foods you eat have to be carefully examined, if not completely eliminated, before consumption.

Fallon, an optimistic 23 year-old woman, has launched a spirited fight against the hardships of living a gluten-free life. She and her father Bob opened Fallon’s Bake Shop three weeks ago in Fords, NJ. A completely gluten-freeand nut-free facility, the father-daughter team offer an easy solution to gluttonous food-lovers (like yours truly!) diagnosed with celiac disease. Customers can buy an entire day’s worth of meals at Fallon’s, as the family’s gluten-free formula has been applied to breakfast, lunch, and dinner items. Muffins, pizza, ravioli, Italian, white, and multi-grain breads, custom cakes, cupcakes, and cookies line the shelves of the cozy shop on Crows Mill Road.

Diagnosed with celiac disease herself, Fallon is fully aware of the consequences of gluten. With that, she has decided to dedicate her life to eating healthy and helping others do the same. During the interview with the bakery owners, together we were able to count only three gluten-free bakeries in the entire Garden State! It is a pleasure to announce the opening of Fallon’s just in time for Celiac Disease Awareness Day on September 13.

In line with her aim to help New Jerseyans eat healthier, Fallon has also introduced nut-free and casein-free foods. According to Wisegeek.com, casein is a protein found in milk and processed foods like cheese that is linked to negative effects on people with autism.

Fallon’s Bake Shop is further distinguished in its use of all natural, fresh ingredients and no preservatives. Although gluten-free products are becoming more common today with the greater awareness of celiac disease, nonetheless it is still difficult to find fresh gluten-free foods. Many stores and online retailers sell their foods frozen.

Because I confessed my chocolate addiction, Fallon allowed me to sample a “Heavenly Mound” during my visit to the bakery. Chocolate cake topped with a subtle raspberry spread, and then topped again with a light whipped cream, and finally covered in a rich chocolate shell, I understood where the pastry got its name. The healthy commitment certainly doesn’t compromise the taste at Fallon’s. In fact, I couldn’t leave without purchasing a loaf of their tempting-looking multi-grain bread.

For those with food allergies, celiac disease, or just conscious of eating healthier, Fallon’s Bake Shop provides what you need (or crave) with the confidence of knowing that your health isn’t at risk. In addition, as new business owners, Bob and Fallon have already mastered the art of customer service. Their friendly attitudes and wealth of knowledge on food allergies are a relief for customers with questions.
