The kids are heading back to school and that means fall is just around the corner. Many foods lend themselves to this time of year. If you are looking for a tasty fall snack, something different to add to those school lunches or a simple treat to whip up for those fall parties, this pumpkin spiced nuts mix recipe might be right up your alley.
Round up these ingredients:
6 egg whites
4 teaspoons water
4 (12 ounce) cans salted peanuts
2 cup whole blanched almonds
2 cup walnut halves
3 cups granulated sugar
6 tablespoons pumpkin pie spice
1 1/2 teaspoon salt
2 cup raisins
Now it is time to mix things up. Start by beating the egg whites and water until frothy in a large mixing bowl. Add nuts and stir gently to coat. IN a separate bowl, mix together the sugar, pumpkin pie spice and salt. When thoroughly mixed, add this to nut mixture and stir gently to coat. Fold in raisins. Spread into two greased 15 x 10-inch baking pans. Spread the mixture out as much as possible to prevent clumping. Bake, uncovered at 300 degrees F for 20 to 25 minutes or until lightly browned, stirring every 10 minutes. Let the snack mix cool completely before removing from trays.
The mixture can be stored in airtight containers and doled out as desired. You can also divide it up into fall-themed snack bags or containers. It can be given as gifts, used as a party favor or sealed in zipper food storage bags and dropped into lunch bags for the kids.
The recipe yields about 10 cups of snack mix or roughly 30 to 40 servings. You can change up the seasonings and use others that you prefer. There really is no limit to the spice combinations you can use. Check out the video for some variations on this recipe.
