
Coffee and fall, is there a combination that is any better?
Here in Raleigh, North Carolina you do not have to go very far to indulge in a good cup of coffee. Often when you go into your favorite coffee shop you will also find a selection of sweet treats to have with your fresh cup a Joe!
This cookie recipe is the perfect combination of chocolate and coffee. These cookies are soft and moist. They will make the perfect accompaniment to any cup of coffee. If you are not a fan of caffeine but enjoy the flavor of coffee, you can use decaffeinated coffee in this recipe.
Chocolate Latte Cookies
Ingredients:
- 1 cup margarine, softened
- 2 cups brown sugar, packed
- 2 eggs
- 2 3/4 cups flour
- 1/2 cup cocoa powder
- 1/8 cup instant coffee (dry granules)
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 6 ounces chocolate chips
Directions:
Preheat oven to 350*. Line 2 cookie sheets with no stick foil. Cream margarine and sugar together with an electric mixer. Add eggs and mix until well blended.
In a separate bowl, mix together: flour, cocoa, coffee, baking powder and soda and salt. Add dry mixture to wet mixture until well combined. Add in chocolate chips and mix.
Drop onto foil lined pans each one being about tablespoon size. Drop about 2 inches apart.
Bake for 8-10 minutes.
Will make about 3 1/2 dozen cookies.
