Enjoying the fruits of late summer

Summer is winding down going toward fall, time to relish all the juicy & sweet fruits. Strawberries are still in abundance; peaches and melons are the stars for this month.

A favorite cobbler is the peachy kind. Though cobblers are traditionally made with only a top crust, to enjoy all the juicy goodness of peaches, a bottom crust is included in most recipes.

The recipe below is super-easy requiring only 5 ingredients and even though it is a top crust cobbler only, served warm with ice cream makes up for the single crust.

Easy Peach Cobbler

Ingredients:

  • 2-1/2 c. fresh peaches (pitted, peeled and thinly sliced)
  • 1/2 to 1 c. white sugar
  • 1 egg
  • 1-1/2 c. biscuit mix
  • 1/2 c. butter (melted)

Directions:

Place peaches in bottom of 8 x 8 pan. In a mixing bowl beat egg and then add sugar and biscuit mix , stir until crumbly. Crumble evenly over peaches. Pour melted butter evenly over the top.

Bake 350 degrees for 30-35 minutes or until golden brown on top. Remove from oven. Stir warm or room temperature with a scoop of vanilla ice cream.
