Give your mouth a burst of sunshine with a light and tangy citrus vinaigrette salad dressing. It will be like tasting a little bit of sunshine in every bite. Citrus is tasty and very aromatic so it will tempt a few more of your senses as you enjoy your salad. A variety of mixed greens, some chopped or sliced vegetables such as peppers, tomatoes, radishes and zucchini will provide roughage, a nutritious and healthy salad as well as provide some of the foods from at least three different food groups.
- 3 tablespoons of fresh orange juice or tangerine juice
- 2 teaspoons of balsamic vinegar
- 2 teaspoons of honey
- 1 minced clove of garlic
- 2 tablespoons of olive oil
- In a small bowl whisk together all the ingredients and pour into a cruet or directly over salad greens.
