One of the earliest crops harvested in the spring is the chive. Chopped chives - both the green foliage and the purple flower - impart a mild onion flavor to soups, salads and dressings. This low-fat version of chicken salad uses chopped chives fresh from the garden or your favorite farmers market, and the cream cheese and yogurt combination make a creamy, tangy substitute for mayonnaise.
Better For You Chicken Wrap
1 lb. cooked white meat chicken, chopped
3 oz. low-fat cream cheese, softened
1/2 c. low-fat plain Greek yogurt
1/2 c. chopped chives
4 6" low-carb whole wheat soft tortillas
In a medium bowl, blend cream cheese and yogurt together using a fork. Stir in chopped chives. Add chicken and mix until thoroughl incorporated.
Place 1/4 of the mixture onto the center of each tortilla. Roll gently. Serve cold or warm for 30 - 45 seconds in microwave.
Add two or three sprigs of fresh asparagus that has been steamed to each wrap.
