As reported in Science Daily (August 26, 2010), Zhimin Xu, Associate Professor in the Department of Food Science at Louisiana State University Agricultural Center in Baton Rouge, spoke at the 240th National Meeting of the American Chemical Society and explained, "Just a spoonful of black rice bran contains more health promoting anthocyanin antioxidants than are found in a spoonful of blueberries, but with less sugar and more fiber and vitamin E antioxidants."
That makes black rice extra healthy.
According to the American Spice Company, "Chinese black rice is a short grain rice with a high gluten content making it perfect for both sweet and savory dishes. Chinese black rice is deep black in color prior to cooking and imparts a beautiful deep dark purple color after cooking. This rice has a sweet flavor and a wonderful sticky texture. Traditionally served in Taiwan and mainland China as a dessert ingredient. In the West, black rice is most often found served with main courses."
That makes black rice extra tasty.
In this area, Plum Market carries Lotus Foods Forbidden Rice. If you see a recipe calling for Italian black rice, you can substitute the Asian variety. You should feel free to substitute Italian for Asian as well.
According to Wise Geek, "Italian black rice is a medium grain rice variety with a blackish to dark purple hull. It is closely related to Asian black rice, although it tends to be slightly less glutinous when cooked than the Asian variety. Like other whole grain foods, Italian black rice is rich in vitamins and minerals, making an excellent dietary choice as well as an unusual addition to the dinner table. Italian import stores and specialty markets may stock Italian black rice."
