Enjoy baking: Coconut Pompons

Cookies are always a family favorite when the sweet tooth arises. Cookie or cookie bars are usually easy to prepare that even older children can master the art of making cookies.

The recipe below is an old recipe that is simple and quick to prepare and has a surprise center of a pecan. These cookies go great with coffee or hot tea.

Coconut Pompons

Ingredients:

  • 1 c. butter
  • 1/2 c. sugar
  • 2 tsp. vanilla
  • 2 c. all-purpose flour
  • 1/4 tsp. salt
  • 2 c. pecan halves
  • Chopped shredded coconut

Directions:

Cream butter, sugar and vanilla until fluffy. Sift flour with salt and add to creamed mixture, blending thoroughly. Use spoon to dip out dough and shape around each half pecan to form 1-inch balls. Roll in coconut and place on a baking sheet. Bake in a slow oven 325 degrees about 20 minutes. Cool. [adapted from Our Best Cooky Recipes by Martha Logan (1962) – Swift & Company]

Variation: Use whole blanched almonds, date or candied cherry for surprise center.
