Enjoy baking: Chewy butterscotch bars

Cooler weather causes people to spend more time inside and enjoy comfort foods such as meat loaf, pot roast, soups, stews and chili. Also, other favorites in cold weather is homemade breads, cakes, pies and cookies.

This week we’ll have fun baking some baked fresh from the oven cookies. An old cookbook “Our Best Cooky Recipes” by Martha Logan , Swift & Company circa 1962.

This cookbook is full of old time favorite cookies and bar cookies. It includes your basic chocolate chip cookie and peanut butter cookie recipes, but also unusual cookie recipes.

The recipe below is a rich, chewy butterscotch bar, goes great with a cup of coffee or a glass of milk.

Chewy Butterscotch Bars

32 bars, 1 by 2 inches (13 by 9-1/2 by 2 inch pan)

Ingredients:

  • 1/2 c. butter
  • 1-1/2 c. brown sugar (packed)
  • 2 eggs
  • 1 tsp. vanilla
  • 1-1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 c. chopped nuts (pecans, almonds or walnuts)

Directions:

Melt butter in a saucepan. Add sugar and bring to a boil over low heat; stirring constantly. Cool slightly. Drop in eggs, one at a time and mix well. Add vanilla and dry ingredients. Stir in the nuts. Pour into a pan, bottom rubbed with butter. Bake in 350 degree oven for about 30 minutes. Cut into bars when cooled.
