Enjoy a summer salad with beer dressing

Spinach SaladAfter a day of summer heat and excitement, sometimes nothing hits the spot better than a cool salad. Here’s a nifty little beer dressing you can top your favorite salad with. Enjoy!

Beer Salad Dressing

  • 6 Tbsp olive oil
  • 1/2 cup finely minced onions
  • 1 clove garlic, minced
  • 3/4 cup citrusy wheat beer
  • 3 Tbsp basalmic vinegar
  • 1 Tbsp whole grain mustard
  • 1 tsp honey
  • Salt and pepper to taste

Using the olive oil, cook the onions and garlic over medium-low heat until soft. Whisk in the beer, vinegar, mustard and honey. Reduce to low and simmer for 4-5 minutes. Remove from heat and let cool. Add the salt and pepper to taste. Toss with your favorite salad ingredients and enjoy!

Recommendation: I love this dressing on a salad of baby spinach that’s been tossed with mandarin orange segments and pecans, as well as chopped celery and green bell pepper, cucumbers, crumbled bacon and shredded Colby cheese.
