Give the Bellini (traditionally made with Prosecco and peach puree) a makeover using fresh raspberries and ginger liqueur. Shake together with a little lemon juice and simple syrup then add to sparkling Rose and Scuppernong wine for a fun and colorful cocktail. Cheers!
“The Bellini was invented sometime between 1934 and 1948 by Giuseppe Cipriani, founder of Harry's Bar in Venice, Italy. Because of its unique pink color, which reminded Cipriani of the color of the toga of a saint in a painting by 15th-century Venetian artist Giovanni Bellini, he named the drink the Bellini. The drink started as a seasonal specialty at Harry's Bar, a favorite haunt of Ernest Hemingway, Sinclair Lewis and Orson Welles. Later, it also became popular at the bar's New York counterpart. I was just speaking with my friend, George Kearns III, and this is a favorite of his on the Via Veneto in Rome. Although many Italians and Americans confuse the several Harry’s Bars - with one another, George knows better, that they are not related. Yet still tasty and good, one could visit all of them?! Perhaps I'll propose this as a new life journey to one of our readers to pick up...
Via Veneto, by the way, is one of the most famous (and expensive) streets in Rome, Italy. The official name is via Vittorio Veneto, after the Battle of Vittorio Veneto. Federico Fellini's classic 1960 film La Dolce Vita was mostly centered around the Via Veneto area. This made the street famous in the 1960s–1970s and turned it into a center for upmarket cafes and shops. Today some of Rome's best hotels are located there. It's home to the famous Café de Paris and Harry's Bar, immortalized in Fellini's flick, as well known haunts for celebrities in Rome.

INGREDIENTS
· 2 Tbsp. (1 ounce) Domaine de Canton (ginger liqueur)
· 1 Tbsp. (1/2 ounce) lemon juice
· 1 Tbsp. (1/2 ounce) simple syrup
· 4 Driscoll's Raspberries, plus one for garnish
· Ice
· 6 Tbsp. (3 ounces) Chandon Rosé or Sparkling Rosé
· 2 Tbsp. (2 ounces) Baker Buffalo Creek Winery Scuppernong wine
· Candied ginger for garnish
INSTRUCTIONS
1. Combine the Domaine de Canton, lemon juice, simple syrup and 4 raspberries in a cocktail shaker.
2. Top with ice and shake vigorously.
3. Add Chandon Rose (or Sparkling Rose) along with the Baker Buffalo Creek Winery Scuppernong wine in a champagne coupe glass.
4. Strain shaken contents into glass with Rosé.
5. Garnish with a skewer of raspberry and piece of candied ginger on a very nice toothpick or decorative pick.
