It may have gotten its name from the "flash" of frosting that glistens across its top. The French call the dough of these treats “choux,” which is carefully baked to allow for a hollow interior.
Once cool, the pastry then is filled with a flavored custard that may be vanilla, coffee or chocolate, or with whipped cream, or chiboust cream; and then iced with fondant icing. Other fillings include pistachio and rum-flavored custard, fruit-flavored fillings, or chestnut purée. Then the eclair is topped off with a chocolate icing.
The eclair has been a bakery shop staple since its creation in the 1860s, and it will undoubtedly continue to popular for a long time.
