Eggplant, everyone knows them as that shiny purplish black vegetable that tastes so good in eggplant parmesan but today, there are eggplant in every color of the rainbow and a multitude of colors and even shapes. Let’s scour the seed catalogs and see what we can find.
Burpee brings us a 100 year old heirloom favorite, Black Beauty, ready 74 days from germination. Black Beauty produces large, dark fruit of traditional shape and flavor.
Also from Burpee a new eggplant released this year, called Shooting Star. The shape may be familiar but the color is extraordinary. Shooting Star produces useable fruit in just 57 days on sturdy, 30” tall plants.
Harris seeds offer us a 75 day white eggplant called White Star. Fruits are 6” - 7” long and pure white. They are describes as sweet, and not in the least bitter.
Parks Seeds has an interesting ornamental eggplant called Easter Egg, because the fruits are exactly the size and shape of eggs, and come in colors including white, yellow, orange, cream and green on the same tiny 12” plant. A nice fun project for one and all!
New leader is an elongated purple and white eggplant from Evergreen Seeds. Describes as prolific it is ready in just 45 days from germination.
Rosa Bianca eggplant is broadly available and is uniquely pink and shaped more like an acorn squash than an eggplant. The flavor however is quite traditional.
