This egg recipe is perfect any time of day and for any meal. It’s so easy and is really a complete meal in one dish. This is such a versatile dish, that you can have it often and just change up some of the ingredients to make it a different way each time. It’s called a “frittata” and it’s like an omelet made inside out.
Omelets always start with the egg mixture which is folded around the other ingredients. The frittata starts with the filling and the eggs are added after. The rest is finished under the broiler to crisp the cheese on top.
Like an omelet, you can make this recipe your own by adding all kinds of other ingredients, herbs and spices. Use sweet potatoes instead of regular potatoes, broccoli, spinach or other vegetables. Use pepperjack cheese to spice it up a bit. You can basically look in your refrigerator to get ideas for other ingredients and you can make it a different way each time.
Whatever you do, just make sure that you use a pan that can be used on the top of the stove and then can be put under the broiler as well.
Frittata Recipe with Potatoes
Ingredients for Frittata with Potatoes:
- 4 medium potatoes, sliced with skins
- ½ red bell pepper, chopped
- Olive oil
- 4 eggs
- 2/3 cup milk
- 1 tsp. garlic powder
- 1 tsp. salt
- ½ tsp. pepper
- Dash of rosemary
- ½ cup cheese, shredded
Directions for making Frittata with Potatoes:
In a non-stick pan with heat-proof handles, cook the potatoes in olive oil over medium heat. Turn them from time to time to cook them evenly. After nearly cooked through, add the bell pepper. Continue cooking until the potatoes are tender in the middle and crispy on the outside. Arrange them in an even layer on the bottom of the pan.
In a mixing bowl, put the eggs, milk, and spices. Whisk together very well so that the mixture is frothy. Pour over the potatoes, cover and cook over medium-low heat until the eggs are set on top. Remove the cover and sprinkle the top with cheese. Place the dish under the broiler for 2-3 minutes or until golden brown and bubbly. Cut into wedges and serve warm.
