
These egg muffins are great for brunch. They are quick to assemble and are best eaten warm. (See the slide show below)
Egg Muffins
- 1 box instant stuffing mix
- 5 eggs, scrambled
- 4 strips of bacon, pork or turkey
- 1 cup shredded cheddar cheese
Prepare stuffing mix according to box directions.
Cook bacon. Break each piece into 3 pieces.
Spray muffin tin with cooking spray or insert cupcake liners into pan (all 12 cups).
Place stuffing mix on the bottom of each cup. Press it down with a spoon.
Add 1 small piece of bacon to each cup.
Pour in eggs equally into each cup.
Top with cheese.
Bake at 400* for 20 minutes.
Muffins do tend to stick to the pan.
