Edible crafts for kids: Watermelon cupcakes

My cooking class had more fun making these simple cupcakes than most others we have done. They are cute, look great and best yet, taste REALLY good!

Watermelon Cupcakes

Ingredients

  • Betty Crocker Cherry Cake Mix
  • Oil, water and eggs as directed on the box
  • Mini chocolate chips
  • Fluffy white frosting
  • Red decorating gel (or food color - the gel gives a more dynamic color)
  • Green apple fruit roll-ups (I used generic green roll-ups)

Preparation

  1. Prepare cake mix as directed on package. Add drops of red food coloring or decorating gel until you get a "watermelon pink" color. Stir in 1/2 - 3/4 c mini chocolate chip "seeds"
  2. Let cool.
  3. Add red coloring to white fluffy frosting to make a watermelon pink color (the kids love this step).
  4. Frost all around AND on top of cupcakes.
  5. Tear roll-ups lengthwise and wrap around the sides of the cupcake to make "rind" - a good teaching time for all about watermelons
  6. Swirl the frosting around the top of the cupcake and sprinkle with more mini chocolate chip "seeds"
  7. Enjoy!

Note: the original recipe said to mix cherry Koolaid into the cake. The cherry cake mix makes this unnecessary.
