My cooking class had more fun making these simple cupcakes than most others we have done. They are cute, look great and best yet, taste REALLY good!
Watermelon Cupcakes
Ingredients
- Betty Crocker Cherry Cake Mix
- Oil, water and eggs as directed on the box
- Mini chocolate chips
- Fluffy white frosting
- Red decorating gel (or food color - the gel gives a more dynamic color)
- Green apple fruit roll-ups (I used generic green roll-ups)
Preparation
- Prepare cake mix as directed on package. Add drops of red food coloring or decorating gel until you get a "watermelon pink" color. Stir in 1/2 - 3/4 c mini chocolate chip "seeds"
- Let cool.
- Add red coloring to white fluffy frosting to make a watermelon pink color (the kids love this step).
- Frost all around AND on top of cupcakes.
- Tear roll-ups lengthwise and wrap around the sides of the cupcake to make "rind" - a good teaching time for all about watermelons
- Swirl the frosting around the top of the cupcake and sprinkle with more mini chocolate chip "seeds"
- Enjoy!
Note: the original recipe said to mix cherry Koolaid into the cake. The cherry cake mix makes this unnecessary.
