Seeing the steaks on display in the window-side butcher shop makes ordering one hard to resist. Head Butcher Trevor Morones, trained under some of the finest talent in the world, has established a force to be reckoned with in Echo & Rig’s meat program. Cutting edge techniques [no pun intended], personal relationships with farmers and orders tailored to the customer ensure a magical experience, whether dine-in or ordering from the shop downstairs. The signature Spencer Steak delivers a rush of hearty, juicy flavor, tender composition soaking in just the right amount of salt that sings on the taste buds. The tri-tip could use some work, but it’s hard to go wrong with the rest of the butcher or steakhouse selections.
Hearty entrees span from seafood to poultry and several more of the butcher shop’s excellent meats. Everything is served with spectacular sauces, garlic chips and a mushroom Rockefeller with bacon and breadcrumbs that could easily have its own spot on the menu. Soups, salads, pastas and sandwiches go great for lunch or dinner, as is a lengthy wine list and eclectic cocktail menu that delivers beautiful tastes. The dining room is well laid-out albeit a bit noisy; be sure to reserve a spot on the patio, where you can lounge for what seems like forever simply taking in views of Tivoli and the sprawling suburbs.
