Vegan Mac and Cheese

Ingredients

One and a half pounds of pasta and preferably macaroni "Cheese" Sauce
One and a half cups of unsweetened nondairy milk
One and a half cups of dietary yeast
One cup of vegetable oil
One cup of water
One third cup of soy sauce
Quarter block of strong tofu
One tablespoon of garlic
One tablespoon of paprika
One tablespoon of salt
One spoon of mustard

Instructions

1. Heat oven to 350 degrees. Boil water in a large pot and make pasta using package directions.
2. Blend "cheese" sauce ingredients. Once pasta is cooked, drain and place in pan. Pour the "cheese" sauce onto the pasta.
3. Bake 15 minutes until the top of the pasta looks golden.

This vegan mac and cheese is extremely easy to make and is quite delicious after every mouthful! If you are making this for yourself, it can last five days if you eat it for all three square meals of the day.

So, you can add nine ounces, instead of, three ounces of tofu, but not firm tofu, in which, you should not be able to tell the difference. It also helps to reduce some of the unnecessary fat by decreasing the oil to three quarters of a cup, instead of, one whole cup.

Based on VegWeb.com, if you want to thicken this vegan mac and cheese then you can get rid of the tofu and add cornstarch. According to another review, it can taste way better if you remove the tofu, yeast and soy sauce. Instead, you should use rice milk and can thicken it with earth balance butter and organic flour.

Another person used two teaspoons of Spike, instead of, salt and used soft tofu. Also, you might want to cut the water down to half a cup, since it might be too watery. This should not affect the flavor of the vegan mac and cheese, but use two teaspoons of mustard and maybe a quarter cup of soy sauce.

Also, if you use only one pound of macaroni, it can make it even creamier. Now, you may think the pasta is not thick enough, so go ahead and use more tofu and sauce to your liking.
