Here is a super easy tomato soup recipe. As always, use organic ingredients whenever possible.
- 8 tomatoes
- 1 medium onion
- ½ stick butter
- 3-4 tbsp sugar
- ½ cup flour
- 6 cups skim milk
- 1/8 tsp Salt, pepper, allspice
Peel 8 medium tomatoes.
Cut them up with one medium onion, and boil until soft and tender. (About 1-2 hours)
In soup pot, melt 1/2 stick butter and 3-4 tbsp sugar…whisk in 1/2 cup flour. Gradually whisk in 6 cups skim milk and simmer until thickened.
With blender liquefy tomatoes and add to milk mixture. Add salt, pepper, and about 1/8 tsp allspice. Simmer about 10 minutes.
