What You Need:
(Makes: Serves 6)
6 boneless chicken breast halves
1/2 cup of onion, chopped
3 tablespoons of melted butter, divided
1 package (10 ounces) of frozen spinach, thawed and squeezed dry
16 ounces of ricotta cheese or part skim ricotta
1 egg, lightly beaten
1/4 cup of fresh parsley, chopped
1/2 teaspoon of dried leaf oregano
1/2 teaspoon of dried leaf basil
Ground black or seasoned pepper, to taste
Parsley sprigs for garnish, if desired
What to Do:
STEP 1) Pound each chicken breast lightly to flatten evenly; set aside.
STEP 2) In a frying pan, sauté the onion in 1 tablespoon of butter over medium heat until tender, about 10 minutes.
STEP 3) In a medium bowl combine the cooked onion with the spinach, cheese, egg, parsley, oregano, basil, pepper, and nutmeg. Mix well.
STEP4) Place approximately 2 tablespoons spinach-cheese filling on each chicken breast and roll up. Fasten with string or toothpicks. Place in 1 layer in a glass baking pan.
STEP 5) Sprinkle the chicken with paprika and drizzle with remaining melted butter. Bake at 350 degrees for 40 to 45 minutes, or until golden brown and chicken is cooked through. Garnish with parsley. Serve with rice or hot buttered noodles, if desired.
