Easy Sausage Soup

A cold rainy day begs for a big pot of soup. This soup is so delicious and perfect for this time of year. To make this soup a little healthier, I replaced the regular sausage with turkey sausage. Like most soups, this soup can be started early and left to simmer on the stove throughout the day. Enjoy!





2-3 boxes of 32 oz chicken broth (you can substitute water for one of the boxes)
2 medium carrots, chopped
1 medium onion, chopped
2 celery stalks, chopped
2 bay leaves
1lb sausage, sliced
1 can chopped tomatoes
2 garlic cloves, chopped
1 can of white beans, drained and rinsed
1 ½ cups chopped kale

Cooked sausage completely and remove from pot.
Add carrots, onions, celery and garlic and sauté until softened a bit.
Add broth, bay leaves and tomatoes.
Let the soup simmer until the vegetables have softened completely.
Add the sausage back to pot along with the kale and the beans until kale cooks down and beans are warmed.
Salt and Pepper to taste.

    This looks great! I love sausage, and I love soup... this has to be perfect. I've added it to my weekly review for the week because I liked it so much.
