The weather in Phoenix is a lot warmer now and we are staring to see the signs of spring. Spring means spring festivals, outdoor parties and picnics. Here are two sandwich recipes that make great additions to any picnic basket. They are also good for school lunches, snacks and as little munchies. Here is the recipe for easy egg sandwich and cucumber relish sandwich.
Easy egg sandwich
- 2 hardboiled eggs
- 1 tbsp light mayonnaise
- 1 tsp black pepper powder
- 4 slices bread (white or wheat)
- 2 tsp spreadable butter
Chop the eggs into small bits using an egg slicer or a sharp knife. Mix with the mayonnaise and pepper and keep aside. Cut the crusts from the bread slices. Lightly butter 2 bread slices. Place the unbuttered bread slices on a cutting board. Put 2 tsp of the egg mixture on the bread slices. Spread evenly to cover the entire slice. Place the other bread slices (buttered side down) on the egg filling. Cut each sandwich into diagonal halves. Makes 4 half sandwiches for your next picnic.
Cucumber relish sandwich
- 1 medium cucumber (pealed and sliced thin)
- 4 slices of bread (white or wheat)
- 4 tsp spreadable butter
- 1 tbsp cucumber relish
- Salt and pepper
Lightly pat the cucumber slices to remove excess water. Cut the crusts from the bread. Butter all 4 slices of bread. Put a bread slice (buttered slice up) on a cutting board. Arrange 6 cucumber slices on the bread so that they overlap and cover the entire surface. Sprinkle salt and pepper. Spread 1 tsp cucumber relish on the cucumber slices. Cover with remaining bread, cut into quarters and serve cold.
