Getting the family back into the school routine never goes as easily as we hope. Making a batch of these tasty granola bars won’t guarantee a smoother time but they are a convenient go-to choice for breakfast or after school snack. These are also a great choice to add to your kiddos lunchboxes.

These granola bars are not only quick to make but the ingredients can be adjusted to what’s in your pantry. They are easily adapted to accommodate picky eaters and those with allergies.

Quick, easy chewy granola bars

4 cups quick oats
1 1/2 cup chopped nuts ~ try walnuts, almonds, cashews alone or combined
1/2 cup shredded coconut
3 cups dried fruits ~ try cranberries, cherries, apricots, raisins alone or combined
1 teaspoon cinnamon
1 teaspoon salt
2/3 cup peanut butter (or an alternative such as Sunflower Seed Butter)
1/2 cup honey
2 teaspoons vanilla or almond extract

Preheat oven to 350
Grease bottom of a 10 x 10 pan.
Combine oats, nuts, fruit, coconut, cinnamon and salt

Mix together peanut butter, honey and extract
Stir peanut butter mixture into oats until well blended
Spread mixture evenly into baking pan.

Bake 15 minutes, or until edges are golden
Cool and slice into bars
Stores for a week in an airtight container

Chocolate chips can be added or melted and drizzled over the bars for a fun option.
