One of the most effective ways we can promote sustainable farming is to buy and use produce that is locally in season. Throughout the summer I will feature some of these fruits and veggies with delicious recipes and suggestions. Be sure to purchase from a local farmer's market or produce stand. That way, you can be sure everything is fresh AND local.
It's early summer, and right now tomatoes are sweet, ripe, and plentiful. My grandfather grows such good ones that I put them between two slices of bread with vidalia onion and a touch of mayo. Not that brave? A pico de gallo highlights the tomato's freshness and is divine on a hot day. Serve it with chips or use it to top grilled chicken.
Finely chop 5 to 6 tomatoes (removing seeds and pith before), one vidalia onion, 2 cloves garlic and one seeded jalapeno pepper.
Combine lightly in a bowl, adding 1.5 teaspoons of salt and the juice of one lime.
Stir in a ¼ cup of fresh cilantro, finely chopped.
