Easy peasy red lentil soup

Warm up the winter with this super simple and delicious red lentil soup!
Lentils are a great source of protein for vegans, vegetarians and omnivores alike. They are also high in folic acid, dietary fiber, vitamin C, and B vitamins which makes them very nutritious! They are also rich in soluble fiber, which makes them great at aiding in digestion and detoxification. All around lentils are a great addition to your diet!

Easy Peasy Red Lentil Soup

1 medium yellow onion chopped
1 jalapeno chopped
1 clove garlic chopped
2 cups dried red lentils sorted
8 cups water
2 Tbsp extra virgin olive oil
2 Tbsp curry powder
1 tsp dried oregano
1 bay leaf
salt and pepper to taste

Start with a large pot over medium heat. Add the olive oil. Once the oil is warm, add the onion, jalapeno, and garlic. Sauté until soft. Add the spices, oregano, curry powder, and bay leaf and stir. Cook for a minute or until the aroma of the spices fills the kitchen. Add the water and lentil and bring to a boil. Reduce heat to simmer and cook for about 20 minutes or until the lentils are soft. Add salt and pepper to taste. Enjoy!
