Easy pasta recipe: Fettuccini with ham

This is somewhat like pasta carbonara with ham instead of bacon.  Like pasta carbonara, this can be ready in a flash.  This is a pasta recipe with a creamy, delicious sauce that is better eaten right after it is prepared.  Although you can reheat it, it is truly better when it’s freshly made.  Because it’s easy and quick to prepare, you can enjoy it after the end of a busy day.

Some people shy away from pasta, thinking it’s not a healthy meal.  There are so many types of whole wheat or enriched pasta, you can make it healthy.  Add peas or spinach to it for an even healthier dish.

Fettuccine with Ham Recipe

Ingredients for Fettuccine with Ham:

  • 4 eggs
  • ¼ cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 12-ounce box dry fettuccine
  • ¼ cup butter, softened
  • 2 cups peas, cooked
  • 2 cups ham, in bite-sized pieces
  • Pepper, to taste
  • Extra shredded parmesan for the top
  • Toasted walnuts (optional garnish)

Directions for Fettuccine with ham:

In a small mixing bowl, whisk together the eggs, cream, and Parmesan.  Set aside.

Cook the fettuccine according to the package directions, but cook 1 minute less.  Drain, then immediately return to the pan and stir in the butter until melted.  Then quickly stir in the egg mixture over very low heat until thoroughly mixed in with the pasta.  (The hot pasta will help cook the egg mixture, so cook it over very low heat stirring continually until the egg is cooked.)

Add the peas and ham and stir until incorporate.

Remove from the heat.  Serve immediately with additional grated Parmesan.
