Easy pancakes for the pancake challenged

If you would prefer to not purchase another gadget then you can try making yourself some Pancake Muffins! That's right, simple pancake muffins. The great part is that you can make a variety of flavors all at once. You can add chocolate chips, bananas, blueberries, strawberries, bacon, or even just make some plain pancake muffins. The best part is, you can have 12 pancake muffins ready for your hungry crew in about 20 minutes.

Prepare your pancake mix as you normally would; it doesn't matter if you make it from scratch or from a mix, that is up to you. Spray your muffin tins with cooking spray. Fill your muffin cups about 3/4 full with the mix. Add your favorites: blueberries, chocolate chips, etc. Place in a 350 degree oven for around 15-20 minutes or until the tops are firm. Remove from oven and cool slightly before serving. You can eat them as is, or with syrup and sprinkled confectioners sugar. The best part is they can be a grab-and-go breakfast for those busy mornings if you've made a bunch of them ahead of time.
