Fried rice is a quick, healthy meal that you can pull together out of leftovers in just fifteen minutes!  After a holiday season filled with too many rich treats, you may want to clear out your fridge and start the new year on a healthy footing.  The secret to staying sane in the kitchen is the no-measure recipe.  If you can taste it, you can make it!


  • chopped onion, scant quantity (about half an onion for a large frying pan)

  • scant amount cooking oil

  • small quantity chicken breast or extra firm tofu, cubed

  • several eggs

  • white or brown rice, any amount to suit your family size

  • soy sauce or tomato ketchup

  • frozen peas or vegetable medley

Heat a scant amount of cooking oil in a large frying pan (a wok is a nice but unnecessary luxury).  Saute the onions until translucent, then add chicken or tofu (you can skip the protein if you are making a side dish).  After the chicken is no longer pink or the tofu is beginning to brown, crack several eggs and add them to the pan.  Stir.  Before the eggs set too firmly, add cooked rice and soy sauce or ketchup to taste.  Toss well to break up lumps, and taste frequently, adjusting seasoning as desired.  Add peas or vegetable medley and heat through.
