One of the best entrée items to fill your plate with is beans. There is so much variety in beans. Beans is a vegan favorite because they are full of both complex carbohydrates and an excellent source of protein. One of the neatest things about beans is how diverse they can be, depending on which vegetables you add. Each vegetable creating a different palate.
The basic bean recipe is very simple. Anyone can make this recipe, it requires no special cooking skills. The beans will turn out perfect, each and every time.
The ingredients you will need to make the recipe are:
One can of beans of your choice
One large tomato
One large onion
Three stalks of green onion
Two limes (juice only)
One can of water
Two tablespoons of olive oil
First, cut the tomato and onions. Pay careful attention not to dice the vegetables too thin, or they will dissolve when cooking. On the other hand, do not cut the vegetable pieces to large or they may not cook fully.
Put the diced vegetables in a medium saucepan with the bottom lined with olive oil. Add three stalks of green onion. Add the juice of two freshly squeezed limes to the vegetables. Stir the vegetables until brown.
Once the vegetables are starting to caramelize, it is time to add a can of beans. Choose which ever flavor of the beans you would like, for example, red beans. Empty the whole can in the pan with the vegetables, not draining the liquid out of the can. Using the can, add another can of water to the saucepan.
Next, cook the beans on medium low for two hours, stirring frequently. When the beans appear to be soft and fully cooked, reduce the heat on the stove to low. Cook the beans on low for about 45 minutes to dry some of the water out of the pan.
Serve with rice or your favorite entrée. This makes a wonderful vegan recipe however, is a good side dish for pork chops or grilled chicken breast. It is a dish that can be served any time of the year for any occasion.
