Using up your garden fresh tomatoes or the fresh tomatoes found at farmers’ markets and grocery stores is easy with quick recipes for evening meals.
The pasta salad below is a healthy salad with protein and vegetables. Serve with crusty bread and fresh fruit.
Chicken & Pasta Dijon Salad
- 2 T. olive oil
- Salt and black pepper
- 3 chicken breasts (boneless & skinless)
- 1/4 c. Dijon mustard
- 1/2 c. olive oil
- 1/4 c. red wine vinegar
- 2 green onions (sliced)
- 1 garlic clove (minced)
- 2 large fresh tomatoes (seeded and chopped)
- 1/2 c. fresh broccoli florets
- 1/2 c. fresh pea pods
- 1/2 c. whole kernel corn (thawed)
- 1 lb. penne pasta (cooked & drained)
Mix together mustard, olive oil, vinegar, onions and garlic. Let stand at room temperature for 2 to 3 hours.
Season chicken breasts with salt and black pepper. In hot skillet sauté chicken in olive oil until chicken is cooked through and juices run clear. Remove from skillet, let cool. Slice chicken breasts across in diagonal slices.
In large bowl combine vegetables, pasta and chicken. Pour mustard dressing over salad; toss lightly. Serve immediately. 4 to 6 servings.
