As the farmers’ markets are starting to wind down, it isn’t too late to shop for some fresh vegetables and fruits. Freezing and/or canning are a great way to be able to enjoy those fresh foods during the winter months.
Or if you just want to enjoy the fresh food now, there are many recipes of simple dishes to prepare on a weeknight or weekend.
Below is a quick weeknight meal to enjoy. Add a side salad and fresh hearty bread for a complete meal.
Chicken & Fresh Tomatoes with Pasta
- 4 chicken breasts (boneless, skinless)
- 2 T. olive oil
- Salt & black pepper
- 1 large onion (chopped or thinly sliced)
- 3 tsp. garlic (minced)
- 4 fresh tomatoes (peeled and chopped)
- 3/4 c. tomato juice
- 2 T. basil (dried or fresh)
- 2 tsp. oregano leaves
- 1 c. Parmesan or Mozzarella cheese (shredded)
- 6 oz. angel hair pasta
Pat dry chicken breast, slice each breast diagonally in two or 3 slices. Season with salt and pepper.
Heat olive oil over low-medium heat, add chicken and sauté until chicken is lightly browned, lower heat to low. Add onions garlic, tomatoes, tomato juice; stir. Add basil and oregano; stir, cover and simmer for 20-30 minutes. Remove cover, sprinkle Parmesan and or mozzarella cheese over top. Remove pan from heat and cover with lid. Let set for 5 minutes and serve. Serves 4.
