This recipe is fun because each person gets their own dinner packet. Setting up the packets is easy, then bake until done.
Various vegetables can be used in place of the potatoes and carrots such as broccoli, corn on the cob, tomatoes, zucchini or squash.
Baked Pork Chop Dinners
- 2 T. cooking oil
- 4 pork chops
- Salt and black pepper
- 1 small onion (chopped)
- 2 medium size potatoes (thinly sliced)
- 1 pkg. mini carrots
- 1 tsp. dill weed
- 1/4 c. butter
- 4 rectangles of heavy-duty aluminum foil (12” x 16”)
Preheat oven to 350 degrees. In large skillet, heat oil. Brown pork chops in skillet, season with salt and black pepper.
Place one pork chop in center of foil, top with 1/4 of the onions, potatoes and carrots. Sprinkle with dill weed, salt and black pepper. Top with 1 tablespoon butter. Fold foil around pork chop; seal top and sides. Do other 3 pork chops the same way.
Place packets on a 10” x 15” jelly roll pan. Bake for 1 hour or until potatoes and carrots are tender. Open top of packets and continue baking for another 15 to 20 minutes. Remove from oven. 4 servings.
