This tempting one-pan dish is as easy to make as sloppy joes, and you can enjoy it in a bowl or in a toasted bun. You can use any type of long, thin-walled pepper that you like.
1 lb lean ground beef
1 medium onion, chopped
3 anaheim peppers (or other long, green mild or hot peppers that you desire), chopped
1 cup Velveeta Shreds, Queso Blanco (white)
salt and pepper to taste
Chop the ground beef while browning it in a frying pan. Salt and pepper to taste.
When the meat is mostly browned, add the onion and peppers and cook until tender.
Turn off the burner and add the cheese. Mix thoroughly and let it sit for a minute or two.
Serve with your choice of condiments, such as mustard, horse radish or steak sauce.
Velveeta Shreds, available at Walmart, are a tasty, low-fat, low-calorie substitute for regular shredded cheese, and they melt nicely.
