Easy lemon chicken recipe

Many of us associate cooking with punishment. Growing up, my mom would single me out after arguments to slog and sweat in the kitchen with her. It's a wonder then I didn't learn how to cook, considering I was a considerably mouthy teenager.

This recipe, however, is as far from punishment as the Patriots are from beating the Colts. With only five ingredrients, 140 calories, 1.5 grams of fat, and 27 grams of protein not only is it simple but it's exceptionally healthy for you! If you have made a new years resolution to cut back the calories, this meal is perfect for dinner!

After preheating your oven to 350 degrees, start by adding a small spoonful of minced garlic cloves, a hint of salt and pepper, and the juice from 1 1/2 lemons into a mixing dish. To get as much juice as possible from the lemons roll them on the counter before you squeeze them. After mixing the sauce together pour it into a casserole dish and place four chicken breasts evenly in the dressing. Cut the last 1/2 of the lemon into four slices and lay on top of the chicken. Cook for 30 minutes or until the chicken is done. Cooked chicken will appear white throughout. If you stick a fork in the center clear juices should run and the center should not be pink. When cooking chicken there is no such thing as rare, chicken must be cooked all the way through!

A great thing about using lemons in any recipe is that lemon juice can also be a fantastic flavoring for a number of veggies such as asparagus, cabbage, brussel sprouts, broccoli, or lima beans. So buy a few extra lemons and add extra juice to any of these to create an entire healthy meal!
