Easy rice and bean burritos made from leftovers

Using up leftovers is easy, if you know how to combine foods. Using a combination of small amounts of ingredients that you enjoy separately allow you to create affordable meals that taste good and can be quickly made when the mood strikes.

Using leftovers to fill that last tortilla shell is a great way to use up food items before they go bad. Leftover salad from yesterday lunch, combined with beans and rice from last nights dinner, is one way to go.

Ingredients

1 tortilla shell

3 to 4 tablespoons of leftover beans and rice

a sprinkling of shredded cheese, whatever kind is on hand

salad mix

  1. Place the tortilla shell on a plate.

  2. Add three or four tablespoons of warmed (or cold) beans and rice, and sprinkle with the shredded cheese.

  3. Pile some leftover salad mix over the other ingredients, then wrap the tortilla around everything.
