One of the more popular menu items in cafes and bistros right now is flatbread pizza.
With a few short cuts, with the help of a grocery store, you will serve up a better than restaurant quality flatbread.
Below is one variation, but let your epicurean mind go nuts and get creative.
What you need
(Makes one flat bread)
1 each 5 x 10 flatbread (or close in size)
2 tablespoons premade pesto (if you have the skill, please make your own)
6 each slices plum tomatoes
½ cup fresh baby spinach
to taste salt and pepper
4 ounces crumbled goat cheese
2 ounces shredded mozzarella cheese
How to make
*preheat oven to 400 degrees.
*After 30 minutes put flat bread right on the rack in the oven for 5 minutes.
*remove and add and spread the pesto, to cover all the flatbread.
*place the sliced tomatoes, so when you cut the flatbread in 6 even pieces, each piece has a tomato slice in the middle.
*evenly cover with the fresh spinach.
*season with salt and pepper.
*evenly cover with goat cheese, and mozzarella cheese
*bake in the oven for 8-10 minutes, depending on how crisp you want it.
You will definitely enjoy this. This recipe is enough for two to share or just one hungry person.
