Easy fish fillet recipe

Seems the West Side Market or Heinen's has the freshest, best tasting fish at this time of season.  For this recipe you can use Cod, Trout, or Orange Roughy. 


This healthy, tasty recipe can be fried or baked. If fried use butter or a vegetable oil. If baked use just a dab of oil on a paper towel.  Rub the bottom of the baking dish with the oil to keep the fish from sticking.


For the parmesan cheese you can use the Kraft brand in the plastic container. Cornflakes can be crushed into cornflake crumbs if you can not find the box of crumbs. This dish can be served with or without tartar sauce.


 


1 cup of cornflake crumbs                                                        Fish fillets (2-3 lbs.)


1/8 tsp. black pepper                                                                 1/3 grated parmesan cheese


1 egg                                                                                            


 


Mix cornflake crumbs, black pepper and parmesan cheese. Wash and pat dry fish fillets. Dip fillets in egg. Coat with cornflake crumb mixture. Fry over medium, bake at about 300 degrees, turning midway through cooking. Cook until golden brown. Can serve with tartar or lemon juice on the side if desired.
